Meet the team:
Paul came to brewing as a way to chill out from his job in Management Consulting.
Starting with a home-brew kit and the instruction that “you’re not going to make that thing in this house” he found that his local pub (The Elephant & Castle) had the space in the basement and the willingness to join in.
A supper party with Keith sealed the deal and the Pells Brewing Co-Op (based on living in the Pells area of Lewes) was born.
Now in semi-retirement, Paul spends his time between servicing his clients and the basement of the Elephant & Castle where he can be found washing and labelling bottles, bottling beers and brewing up.
His business training means that he is also the de-facto Operations Manager and Chief Financial Officer for the business.
Upon completing a degree in English and Ancient History, Huw followed the natural progression of things and started working in Harvey’s Brewery. Since 2003 he has been running the Elephant and Castle pub, making it a fixture on the CAMRA Good Beer Guide.
After taking the leap into stocking the largest range of craft beers in Lewes, he thought why not add some of his own to the list?
